I prefer salads like this one: no lettuce. It does have leafy green things – spinach and Belgian endive – but its body, heart and soul is bright, tart Granny Smith apples. Adhering to the Magic Salad Formula, it incorporates nuts and cheese along with the apples and is thus quite predictably delicious.

French green bean salad may just be the answer to heavy picnic foods: simple, tangy, crisp, fresh, light, summery, and totally picnic-friendly. It guarantees there will be at least one non-artery-clogging selection on the picnic buffet, and it’s a snap to make, to boot: just blanch the beans and coat with a basic vinaigrette. Toss in some garlic and sliced salads, let it sit and voila!

Gazpacho is Trendy

But gazpacho is trendy, and I’ll grudgingly admit, I kind of like to be trendy. I hate it when people fawn over foods that haven’t really grabbed me, because it makes me feel like I’ve missed something. And I’ll also admit that gazpacho is summery and light and healthy and a great way to use up farm-box vegetables. So rather than abstaining based on the fact that no gazpacho would ever match up to the Galley’s, I figured I would make my own, gosh-darn-it. I’ll have enough veggies all summer for a family of 6. I’ll try a bunch!

My loves of both soup and the squash-apple combo are already well documented. I could go on and on to reiterate that soup is a great way to warm yourself up, to sneak in a load of extra vegetables, and to trick yourself into thinking your meal is incredibly rich when it’s actually quite light. And I could wax poetic – again – about how the sweet richness of butternut squash is perfectly balanced by tart, crisp apples.
