My first love of lasagna is for the “classic”: tomato sauce, ricotta cheese, meat. My food snobbishness has in fact progressed to the point that I won’t make lasagna without also making the noodles.* In my mind, it’s totally worth the effort: the taste and texture differences between dried and homemade noodles are profound.

Given our post-holiday exhaustion, I can’t describe how happy I am that we took the time in the fall to stock the freezer with things like Cincinnati Chili and this hearty meat sauce. Instead of washing all the dishes of making a dinner, it’s as simple as boiling a pot of water and grabbing a few plates.
